Blueberry Oat Pancakes

Oats give these pancakes a soft, tender crumb that keeps everyone full until lunch. The batter rests while the pan heats.

Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 2 tbsp brown sugar
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 3 tbsp melted butter, plus more for the pan
  • 1 1/2 cups blueberries

    Pulse the oats a few times in a blender, or leave them whole for more texture.

    Whisk the oats, flour, baking powder, baking soda, salt and sugar in a large bowl.

    Whisk the buttermilk, eggs and melted butter together, then fold into the dry ingredients.

    Rest the batter for 10 minutes while the skillet heats over medium-low.

    Butter the pan and cook 1/4-cup pancakes, scattering blueberries over each one.

    Flip when bubbles set at the edges and cook 2 minutes more, then serve with warm maple syrup.

Cooking tips

  • Scatter berries on top rather than stirring them in to avoid a purple batter.
  • Medium-low heat cooks the centers through before the outsides darken.
  • No buttermilk? Stir 1 1/2 tbsp lemon juice into regular milk and wait 5 minutes.
