Creamy Garlic Pasta
No cream needed for the sauce to feel luxurious. Gently cooked garlic, butter, parmesan and a ladle of starchy pasta water do all the work.

Ingredients
- 12 oz spaghetti or linguine
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 8 garlic cloves, thinly sliced
- 1/2 cup heavy cream
- 1 cup finely grated parmesan
- 1/2 tsp black pepper
- Salt, to taste
- Chopped flat-leaf parsley, to finish

Boil the pasta in well-salted water until just shy of al dente. Reserve 1 1/2 cups of pasta water.

Meanwhile, melt the butter with the olive oil over medium-low heat and add the garlic.

Cook the garlic gently for 4 to 5 minutes until soft and fragrant but not browned.

Add the cream and 1/2 cup pasta water, then simmer for 2 minutes.

Add the drained pasta and parmesan, tossing constantly and loosening with more pasta water until glossy.

Season with pepper and salt, then serve with parsley and extra parmesan.
Cooking tips
- Grate the parmesan finely so it melts smoothly instead of clumping.
- Keep the heat low when the cheese goes in; a hard boil will break the sauce.
- Add sautéed mushrooms or wilted spinach to stretch it into a fuller dinner.
