Homemade Tomato Soup

Canned tomatoes are the secret to making this any month of the year. Simmering with garlic and a little butter rounds off the acidity.

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion, diced
  • 5 garlic cloves, sliced
  • 2 (28 oz) cans whole peeled tomatoes
  • 2 cups vegetable broth
  • 1 tsp sugar
  • 1 tsp fine sea salt
  • 1/2 cup heavy cream, optional
  • A large handful of basil leaves

Instructions

    Warm the oil and butter, then cook the onion over medium heat for 8 minutes until soft.

    Add the garlic and cook for 1 minute until fragrant.

    Add the tomatoes with their juice, broth, sugar and salt, crushing the tomatoes with a spoon.

    Simmer uncovered for 20 minutes so the flavors concentrate.

    Blend until smooth with an immersion blender, or in batches in a stand blender.

    Stir in the cream if using, tear in the basil and adjust the salt before serving.

Cooking tips

  • Whole peeled tomatoes taste sweeter than pre-crushed ones.
  • Vent the lid when blending hot soup to avoid pressure build-up.
  • The soup freezes well for 3 months; add the cream after reheating.
