Slow Cooker Chicken

Ingredients
- 2 1/2 lb boneless skinless chicken thighs or breasts
- 1 cup low-sodium chicken broth
- 1 lemon, juiced and zested
- 4 garlic cloves, smashed
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- 2 tbsp chopped parsley
Instructions

Rub the chicken with olive oil, oregano, salt and pepper.

Add the broth, lemon juice and garlic to the slow cooker, then nestle in the chicken.

Cover and cook on low for 4 hours or high for 2 1/2 hours, until the chicken shreds easily.

Shred the chicken directly in the pot with two forks.

Stir in the lemon zest and parsley and let it sit 10 minutes to soak up the broth.

Serve warm, spooning some of the cooking liquid over each portion.
Cooking tips
- Thighs stay more forgiving than breasts if the cooker runs hot.
- Store the chicken in its broth so it reheats moist rather than dry.
- For crisp edges, spread a portion on a sheet pan and broil for 3 minutes.
