Ten minutes in the morning gives you dinner and three days of lunches. The chicken stays juicy because it shreds right back into its own cooking broth.

Ingredients

  • 2 1/2 lb boneless skinless chicken thighs or breasts
  • 1 cup low-sodium chicken broth
  • 1 lemon, juiced and zested
  • 4 garlic cloves, smashed
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped parsley

Instructions

  1. 1

Rub the chicken with olive oil, oregano, salt and pepper.

  2. 2

Add the broth, lemon juice and garlic to the slow cooker, then nestle in the chicken.

  3. 3

Cover and cook on low for 4 hours or high for 2 1/2 hours, until the chicken shreds easily.

  4. 4

Shred the chicken directly in the pot with two forks.

  5. 5

Stir in the lemon zest and parsley and let it sit 10 minutes to soak up the broth.

  6. 6

Serve warm, spooning some of the cooking liquid over each portion.

Cooking tips

  • Thighs stay more forgiving than breasts if the cooker runs hot.
  • Store the chicken in its broth so it reheats moist rather than dry.
  • For crisp edges, spread a portion on a sheet pan and broil for 3 minutes.
